Ingredients
- 2 cups almond flour
- 1/2 teaspoon unrefined sea salt
- 1 teaspoon baking soda mixed with 2 tablespoons lemon juice
- 2 pasture-fed, free-range eggs
- 1 1/2 cups pure light coconut milk
- 1/4 cup applesauce
- 2 tablespoons raw honey
- 1 teaspoon pure vanilla extract
- 1 teaspoon ground cinnamon
- 5 tablespoons pure maple syrup
Directions
- Preheat waffle iron to desired temperature.
- Mix together the flour, baking soda mixture, and salt in a large bowl.
- Beat together the eggs, coconut milk, applesauce, honey, vanilla, and cinnamon in a separate bowl then pour into the flour mixture. Mix batter until well blended.
- Ladle the batter into the waffle iron and cook until crisp.
- Top each waffle with 1 tablespoon maple syrup.
