Ingredients
- Olive oil for greasing
- 1 pound ground turkey
- 4 cloves garlic, crushed and chopped
- 1 tablespoon dried thyme
- 1 tablespoon dried basil
- 1/4 cup pure coconut milk
- 4 pasture-fed, free-range eggs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon unrefined sea salt
- 1/2 teaspoon ground black pepper
- 1/2 cup zucchini, sliced
- 1/2 cup kalamata olives, chopped
- 1 1/2 cup mushrooms, sliced
- 1/2 cup roasted red peppers, chopped
Directions
- Preheat oven to 375 degrees f. Grease an 8×8 inch baking dish with olive oil.
- Mix together turkey, garlic, thyme, and basil in a bowl. Drain any excess oil from meat.
- Bake for 18 minutes, or until meat is just about cooked through.
- Whisk together coconut milk, eggs, garlic powder, salt, and pepper in a bowl.
- Stir in zucchini, kalamata olives, mushrooms, and roasted peppers.
- Spread the egg mixture on top of the meat crust. Return dish into the oven.
- Bake for 25-35 minutes, or until set. Cool then serve.
