Ingredients:
- 1 cup dried apricots
- 2 cups walnuts
- 2 organic eggs
- ¼ teaspoon sea salt
- 1 tablespoon vanilla extract
- Process walnuts and apricots in a food processor until well blended and coarse
- Add the eggs, salt and vanilla and blend until the mixture forms a ball
- Spread the apricot mixture in a greased 8 x 8 inch baking dish
- Bake for 25 minutes at 350°. It is best to preheat oven.
- Serve when done baking and cool.
