Ingredients:
- 2 tbsps coconut oil
- 2 eggs
- 1 medium onion, sliced roughly
- 1 small carrot, sliced
- 1 large tomato, sliced
- 1-2 stalks of celery, chopped
- 1 small avocado, sliced
- 1 large broccoli, chopped
- baby spinach, chopped roughly
- 8 slices of ham
- Boil water in a deep pot.
- Gently drop eggs into boiling water and wait for six minutes before turning stove off. Do not remove from boiling water.
- Combine veggies in a large plate with ham.
- Peel eggs and place one in the middle of the veggies
- Add salt and pepper to taste
