Servings: 2-3
Ingredients:
- Sliced Ham
- 2 eggs (or egg whites)
- 1/4 cup chopped veggies
- Saute vegetables of choice in a bit of oil.
- While the vegetables are cooking, whisk the eggs in a bowl and pour over the sautéed veggies.
- Mix well until cooked through.
- Spread the slice of ham and place some of the veggies in the middle.
- Roll the ham around the veggie and egg mix; then lightly brown the ham on the skillet.
You can also substitute a leaf of lettuce for the sliced ham.
