Ingredients
- ¼ cup walnuts
- ¼ cup pecans
- 2 Tbsp. ground flax seed
- 1 tsp. ground cinnamon
- ¼ tsp. ground ginger
- 1 Tbsp. almond butter
- 1 banana, mashed
- 3 eggs
- ½ cup unsweetened almond milk
- 1 handful of fresh berries
- Mix walnuts, pecans, flax seed and spices in a blender or food processor until coarse. Set aside.
- Whisk all the eggs and almond milk until as thick as custard.
- Blend the mashed banana and almond butter well.
- Add the banana mixture to the custard and mix it well.
- Add the nut mixture.
- Warm the mixture on the stove for about 5 minutes; stirring frequently until eggs are thick.
- Garnish the berries on top.
