Bacon Spinach Salad

Ingredients
  • 1/2 pound lean nitrite/nitrate-free bacon
  • 1 pound spinach, rinsed and chopped
  • 1/4 cup sliced fresh mushrooms
  • 3 boiled eggs, peeled and chopped
  • 1/2 cup sliced almonds
  • 1 onion, chopped
  • 1 teaspoon sesame seed
  • 1/2 cup extra-virgin olive oil
  • 2/3 cup raw honey
  • 1/3 cup balsamic vinegar
  • 1 tablespoon prepared Dijon-style mustard
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper


Directions
  1. Cook bacon in a large skillet over medium high heat until browned. Drain bacon in paper towels then crumble and place in a large bowl.
  2. Add the spinach, mushrooms, eggs, and almonds.
  3. Place the onion, sesame seed, olive oil, honey, vinegar, mustard, salt, and pepper in a blender; blend until smooth.
  4. Pour dressing over salad, gently toss to coat then serve.
