Ingredients
- 1/2 pound lean nitrite/nitrate-free bacon
- 1 pound spinach, rinsed and chopped
- 1/4 cup sliced fresh mushrooms
- 3 boiled eggs, peeled and chopped
- 1/2 cup sliced almonds
- 1 onion, chopped
- 1 teaspoon sesame seed
- 1/2 cup extra-virgin olive oil
- 2/3 cup raw honey
- 1/3 cup balsamic vinegar
- 1 tablespoon prepared Dijon-style mustard
- 1 teaspoon sea salt
- 1/2 teaspoon ground black pepper
Directions
- Cook bacon in a large skillet over medium high heat until browned. Drain bacon in paper towels then crumble and place in a large bowl.
- Add the spinach, mushrooms, eggs, and almonds.
- Place the onion, sesame seed, olive oil, honey, vinegar, mustard, salt, and pepper in a blender; blend until smooth.
- Pour dressing over salad, gently toss to coat then serve.
