Ingredients
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small zucchini, diced
- 2 large carrots, diced
- 1 pound grass-fed lean ground beef
- 3/4 teaspoon ground black pepper
- 2 eggs
- 1/2 cup almond flour
- 1/4 cup flaxseed meal
- 1 teaspoon unrefined sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon fresh cilantro, chopped
- 1/2 teaspoon thyme, chopped
- 1 teaspoon dried oregano
- 1/4 cup onion, chopped
Directions
- Heat olive oil in a medium skillet over medium heat. Add garlic and sauté until lightly browned. Add zucchini and carrots, cook until soft, about 3 to 5 minutes; set aside.
- Combine the ground beef and remaining ingredients in a large bowl.
- Shape mixture into meatballs and place on a baking sheet
- Bake at 350 degrees f for 25-30 minutes. Serve warm.
