Zucchini and Carrot Meatballs

Ingredients
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small zucchini, diced
  • 2 large carrots, diced
  • 1 pound grass-fed lean ground beef
  • 3/4 teaspoon ground black pepper
  • 2 eggs
  • 1/2 cup almond flour
  • 1/4 cup flaxseed meal
  • 1 teaspoon unrefined sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon fresh cilantro, chopped
  • 1/2 teaspoon thyme, chopped
  • 1 teaspoon dried oregano
  • 1/4 cup onion, chopped


Directions
  1. Heat olive oil in a medium skillet over medium heat. Add garlic and sauté until lightly browned. Add zucchini and carrots, cook until soft, about 3 to 5 minutes; set aside.
  2. Combine the ground beef and remaining ingredients in a large bowl.
  3. Shape mixture into meatballs and place on a baking sheet
  4. Bake at 350 degrees f for 25-30 minutes. Serve warm.
