Ingredients
- Coconut oil for greasing
- 1/2 cup organic applesauce
- 3/4 cup raw honey
- 1 teaspoon ground cinnamon
- 2 eggs, beaten
- 2 1/3 cups mashed overripe bananas
- 2 cups almond flour
- 1 teaspoon baking soda
- 1/4 teaspoon unrefined sea salt
- 3/4 cup almond nuts, chopped
Directions
- Preheat oven to 350 degrees F. Lightly grease a 9x5 inch loaf pan with coconut oil.
- Whisk together applesauce, honey, and cinnamon in a medium bowl. Stir in eggs and mashed bananas until well blended.
- Combine the almond flour, baking soda, and salt in another bowl. Pour banana mixture into flour mixture then fold in chopped almonds; stir until well blended. Pour batter into the loaf pan.
- Bake for 1 hour, or until a toothpick inserted into center of the loaf comes out clean.
- Let cool, slice, and serve.
