Ingredients
- 1/2 pound lean, nitrate/nitrite-free sliced bacon
- 1/4 cup olive oil
- 1 clove garlic, thinly sliced
- 1 medium shallot, finely chopped
- 2/3 cup pine nuts
- 2 pounds Brussels sprouts, cored and shredded
- 3 green onions, minced
- 1/2 teaspoon unrefined sea salt
- 1/2 teaspoon ground black pepper
- 1/4 cup raisins
Directions
- Cook bacon in a large skillet medium-high heat until crisp.
- Drain bacon in paper towels and discard grease. Crumble and set aside.
- Heat olive oil in the same skillet over medium heat. Add garlic and shallot and sauté until shallot is translucent.
- Stir in pine nuts and cook until browned. Add brussels sprouts and green onions to the pan, season with salt and pepper.
- Cook for 10 to 15 minutes, or until sprouts are wilted and tender.
- Stir in crumbled bacon and raisins.
