Cranberry Spinach Salad

Ingredients
  • 8 cups baby spinach leaves
  • 1 1/2 cup mandarin oranges, drained
  • 1 cup raisins
  • 1 cup green apple, cubed
  • 1/2 medium red onion, sliced into rings
  • 1 1/2 cups roasted almonds, sliced
  • 1/4 cup cider vinegar
  • 2 teaspoons raw honey
  • 3 cloves garlic, chopped
  • 1/2 teaspoon unrefined sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 cup olive oil


Directions
  1. Place spinach onto salad plates. Arrange the oranges, raisins, apple, onions, and almonds on top.
  2. Whisk together the vinegar, honey, garlic, salt, and pepper. Whisk in olive oil by droplets.
  3. Drizzle dressing over salad.
