Ingredients
- 3 tablespoons olive oil
- 1/3 cup chopped onion
- 1 clove garlic, chopped
- 1/3 cup green bell pepper, chopped
- 3/4 pound pasture-fed, free-range chicken meat, cooked and cubed
- 1/2 cup mushrooms, sliced
- 1/2 cup whole tomatoes, peeled
- 1/4 teaspoon dried thyme
Directions
- Heat olive oil a large skillet over medium-high heat. Add garlic, bell pepper, and onion and sauté until soft, about 3 to 5 minutes.
- Stir in chicken, mushrooms, tomatoes, and thyme. Reduce heat to medium low.
- Simmer for 8 to 10 minutes, stirring frequently.
- Serve hot.
