Ingredients
- 2 teaspoons olive oil
- 3 cloves garlic, minced
- 1 1/2 tablespoons grated fresh ginger
- 1 1/2 teaspoons red chili paste
- 3/4 cup fresh mushrooms, sliced
- 1 stalk lemongrass, minced
- 3 cups low-sodium chicken broth
- 3 tablespoons low-sodium fish sauce
- 2 teaspoons raw honey
- 3 1/2 cups pure light coconut milk
- 3/4 pound medium shrimp - peeled and deveined
- 2 tablespoons fresh lime juice
- 1/2 teaspoon sea salt
- 1/4 cup chopped fresh cilantro
Directions
- Heat olive oil in a large pot over medium heat.
- Add the garlic, ginger, chili paste, mushrooms, and lemongrass and cook for 3 minutes.
- Stir in chicken broth, fish sauce, honey, and coconut milk over the mixture; bring to a simmer for 15 minutes.
- Add the shrimp and cook for 5 minutes, until no longer translucent.
- Stir in the lime juice and salt. Sprinkle cilantro on top.
