Thai-style Shrimp Coconut Soup

Ingredients
  • 2 teaspoons olive oil
  • 3 cloves garlic, minced
  • 1 1/2 tablespoons grated fresh ginger
  • 1 1/2 teaspoons red chili paste
  • 3/4 cup fresh mushrooms, sliced
  • 1 stalk lemongrass, minced
  • 3 cups low-sodium chicken broth
  • 3 tablespoons low-sodium fish sauce
  • 2 teaspoons raw honey
  • 3 1/2 cups pure light coconut milk
  • 3/4 pound medium shrimp - peeled and deveined
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon sea salt
  • 1/4 cup chopped fresh cilantro


Directions
  1. Heat olive oil in a large pot over medium heat.
  2. Add the garlic, ginger, chili paste, mushrooms, and lemongrass and cook for 3 minutes.
  3. Stir in chicken broth, fish sauce, honey, and coconut milk over the mixture; bring to a simmer for 15 minutes.
  4. Add the shrimp and cook for 5 minutes, until no longer translucent.
  5. Stir in the lime juice and salt. Sprinkle cilantro on top.
