Ingredients
- 1/4 cup almond butter, softened
- 1/4 cup raw honey
- 1/4 cup pecans, chopped
- 1 cup almond flour
- 1/4 cup pure blueberry jam
- 1/2 cup organic cream cheese, softened (recommended: Organic Valley)
- 2 tablespoons pure coconut milk
- 1 egg
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon pure vanilla extract
Directions
- Preheat oven to 350 degrees f.
- Stir together the butter, honey, flour, and pecans until crumbly.
- Press mixture into an 8-inch square baking pan.
- Bake for 12 to 15 minutes. Cool crust on wire rack.
- Whisk together the blueberry jam, cream cheese, egg, coconut milk, cinnamon, and vanilla.
- Spread filling mixture over baked crust.
- Return pan in the oven and bake for about 20 minutes. Let cool, cover, and chill. Cut into squares and serve.
