Ingredients
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 onion, diced
- 1/2 cup green chilies, diced
- 2 tablespoons ground coriander
- 1 tablespoon dried basil
- 1/4 teaspoon ground cayenne pepper
- 1/4 teaspoon ground black pepper
- 4 cups organic low-sodium vegetable broth
- 3 cups cooked lean turkey breast, chopped
- 1/4 cup fresh parsley, chopped
Directions
- Heat olive oil in a large soup pan over medium-high heat. Add garlic and onion, sauté until onions are translucent.
- Stir in the green chilies, coriander, basil, cayenne pepper, and black pepper.
- Pour in vegetable broth and bring to a boil. Reduce heat to medium low, and cook for 10 minutes.
- Add the turkey and cook stew for 5 minutes more. Sprinkle chopped parsley over the top and serve.
