Ingredients
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 large onion, chopped
- 1 pound ground turkey
- 1/2 teaspoon dried thyme leaves
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cayenne pepper
- 1 teaspoon ground cumin
- 1 pinch crushed red pepper flakes
- 1/2 teaspoon unrefined sea salt
- 1 cup zucchini, diced
- 1 cup carrots, diced
- 2 stalks celery, chopped
- 3 1/2 cups tomatoes, peeled, seeded, and chopped
- 1/2 cup organic low-sodium chicken broth
- 1/2 cup chopped parsley
Directions
- Heat olive oil in a large pot over medium-high heat.
- Sauté onion and garlic in olive oil for 2 minutes, or until onions are translucent.
- Add ground turkey and cook until no longer pink; season with thyme, turmeric, cayenne pepper, cumin, red pepper flakes, and salt.
- Stir in zucchini, carrots, celery, tomatoes, and chicken broth then reduce heat to low.
- Simmer for 25 minutes or until vegetables are tender. Stir in parsley and serve.
