Ingredients
- 1/3 cup coconut oil, melted
- 1/2 cup cocoa, sifted
- 6 eggs
- 1/2 cup raw honey
- 1 teaspoon pure vanilla extract
- 100g dark chocolate (70%-90% cocoa), chopped
- 1/2 cup coconut flour
- 1 teaspoon freshly grated nutmeg
- 1 tablespoon fresh ginger, minced
- Coconut oil for greasing
Directions
- Preheat oven to 356°f. Lightly grease a 9x9 inch baking pan with coconut oil.
- Place a medium saucepan over low heat. Heat the coconut oil and cocoa in the pan; stir to combine. Remove from heat and set aside.
- Whisk together the eggs, honey and vanilla in a bowl. Add the cocoa mixture, dark chocolate, coconut flour, ginger, and nutmeg; blend well.
- Bake for 30 to 35 minutes, or until a toothpick inserted into center comes out clean or with only a few crumbs sticking to it.
- Cool, slice into squares, and serve.
