Ingredients
- 1 cup almond flour
- 1/8 teaspoon unrefined sea salt
- 1/8 teaspoon baking soda
- 1/4 cup dark chocolate, chopped (70%-90% cocoa)
- 3 tablespoons coconut oil, melted
- 2 tablespoons raw honey
- 1 tablespoon pure coconut milk
- 1 tablespoon pure mint extract
- 1 teaspoon almond extract
Directions
- Preheat oven to 350 degrees f. Line a baking sheet with parchment paper.
- Combine the almond flour, salt, baking soda, and dark chocolate in a medium bowl. Whisk together coconut oil, honey, coconut milk, mint extract, and almond extract in a small bowl. Pour wet mixture over dry mixture.
- Fill a tablespoon or cookie scoop with batter. Scoop out batter (about 2 tablespoons per cookie) and drop 2 inches apart out onto prepared baking sheet and lightly press down in the center.
- Bake for 10-11 minutes, or until set. Cool and store cookies in a tightly covered cookie jar.
